Some ways we ensure a perfect rib roast? One way is by searing the roast in a hot oven for about 15 minutes to create a crispy crust, then lowering the temperature and continuing to roast until it reaches the desired level of doneness. We use a meat thermometer to check the internal temperature, and take it out of the oven at 120°F for rare, 130°F for medium-rare, or 140°F for medium.
Though we typically highlight meal sides, this time we want to give a shoutout to dessert pairings that we think compliment rib roasts perfectly. We recommend grilled fruit skewers with pineapple, apple, pear, or peach, with a drizzle of honey or maple syrup; or a velvety pareve pot of chocolate mousse.
