For a perfectly juicy whole chicken with a crisp skin, rub the chicken all over with oil and then season liberally with your choice of spices (we like using a blend of sumac, pepper, turmeric, kosher salt and garlic). Preheat your oven to 425, and bake an hour and a half starting with the meat side down. Halfway through, flip the chicken, and voila – you’ve got the perfect roasted chicken!
